Gingerspelt People

What do you do when your niece who recently gave up lactose misses Gingerbread Men? Make LifeCleanse ones of course! These Gingerspelt People are a simple to make whole food version of a classic favourite. Recipe by Maria, Emily and Annabelle.

Ingredients:

200g organic spelt flour

100g unrefined muscovado sugar

50g organic coconut oil

50g organic maple syrup

2 heaped tsp organic ground ginger

1 tbsp organic ground flax seeds

3 tbsp apple juice

1 tsp organic vanilla extract

1 tsp organic ground cinnamon

1 tsp organic ground turmeric

First mix the ground flax and apple juice in a small bowl and leave aside. Sieve the spelt flour, ginger, cinnamon and turmeric into a large mixing bowl and mix well.

In a separate bowl warm the coconut oil, sugar and maple syrup over a bowl of warm water. Stir gently until melted. Add the vanilla extract and stir well.

Next slowly stir the warm liquid into the large bowl of dry ingredients and then add the flax and apple mix. Stir well and then use your hands to knead the mixture together.

Cool the ball of dough in the fridge for 20 minutes.

Grease a baking tray with a teaspoon of coconut oil and pre heat the oven to 200 degrees celsius or 180 for a fan assisted oven.

Sprinkle some spelt flour on a chopping board or kitchen surface. Roll out the dough and use a hot knife or cookie cutters to cut out your shapes (extra points for the LifeCleanse logo). Place them onto the baking tray.

Bake for 12 minutes and then remove from the oven and leave to cool on a rack for about 10 minutes.

The verdict? She said they taste just like she thought they would 🙂
