Toodles

Thai Turnip Noodles

Serves 4

Ingredients:

1 large organic turnip

2 organic red peppers

half cup organic almond butter

10 organic almonds

half cup water

2 organic spring onions

5 sprigs organic coriander

half cup organic mung bean sprouts (sprout your own here)

1 organic lime wedge

1 inch organic ginger root

1 clove organic garlic

1 tsp organic cayenne pepper

pinch organic sea salt

First mix the sauce

Add 1 cup of red pepper, half a cup of organic almond butter, half a cup of water, 1 spring onion, the juice from a wedge of lime,1 garlic clove, 1 inch ginger root, 1 tsp cayenne and a pinch of salt to your blender. Blend until smooth. Set aside.

Slice the remaining red pepper and spring onion. Chop the coriander and almonds. Set aside.

Spiralize the turnip to make turnip noodles. Why?! Turnip makes the best ‘asian style’ noodles as it maintains a firm consistency. (See our spiralizers here)

Steam the turnip noodles for 4 minutes.

Mix in the sliced pepper, spring onion and bean sprouts. Add the sauce, coriander and chopped almonds and enjoy.
