It’s just coming to the end of peach season but there are still some organic peaches around. I got some in the Green Door Market (Newmarket, Dublin 8) last weekend and made these for dessert.
3 organic donut peaches
2 tbsp organic coconut blossom nectar
2 tbsp organic coconut chips
Cut the peaches in half, removing the stones, and place on a baking tray. Cover each with coconut blossom nectar and sprinkle with coconut chips.
Bake at 180 degrees celsius for 45 minutes.
These can be served alone or with some fruit sorbet or nice cream.
