This is a really tasty lunch option, especially when served with my Spicy Sesame Dressing. Seaweed is an amazing powerhouse of natural minerals, vitamins and amino acids with some great detoxifying properties.
1 Untoasted Nori Sheet (I usually use ‘Clearspring’)
Half an organic avocado
A quarter of an organic cucumber
Half an organic red onion
A handful of broccoli or alfalfa sprouts
Chop the cucumber and avocado into strips and the onion into thin slices. Lay the Nori sheet on a bamboo mat (available in most Asian markets) with the shiny side facing down. Beginning in the second and third segments of the Nori sheet lay the cucumber, avocado, onion and sprouts (see below pic). Use the bamboo mat to roll the sheet, wetting the last segment so it sticks. Cut in half using a serrated knife and serve with spicy sesame dressing.
