BBQ season is well and truly underway. There aren’t usually many veggie options at a BBQ so I decided to try some out. Introducing Salt & Lime Corn on the Cob.
4 organic ears of corn
1 tbsp organic coconut oil
1 tsp organic sea salt
half an organic lime
Peel the ears of corn and rinse them with fresh water. Lay 2 sheets of tin foil (large enough to hold 2 ears of corn each when folded over) on your work surface. Place 2 ears of corn on each sheet of tinfoil. Squeeze the fresh lime over the corn. Next sprinkle on the salt.
Close the sheets of tinfoil making parcels. Place on the BBQ for 20 minutes, turning half way.
Why not serve some 3 minute guac while you wait for the corn!
