Makes 8 – 10 scones.
200g organic spelt flour
120 ml organic oat milk
30g organic muscovado sugar
3 tbsp organic olive oil
1 tsp organic vanilla essence
1 tsp baking powder
1 tsp sea salt
Sieve the spelt flour into a large bowl followed by the sea salt, muscovado sugar and baking powder. Mix these well. Add the olive oil and use your hands to mix this in until the texture is quite crumbly.
Pre heat your oven to 200 degrees celsius or 180 for a fan assisted oven.
Add the vanilla essence to the oat milk in a small jug.
Make a well at the centre of the dry mix, slowly pour in the oat milk using a knife to stir it in.
Sprinkle spelt flour on to your work surface or a board. Knead the mixture on this surface and then cut 8 – 10 small circles out of it.
Line a baking tray to place the scones on. Bake in a pre heated oven at 200 degrees celsius or 180 for a fan assisted oven for 10 – 12 minutes.
