These buckwheat pancakes are a great healthy alternative to traditional wheat pancakes and are dairy free, gluten free, refined sugar free, and vegan.
150g organic buckwheat flour
250ml organic almond milk
1 organic banana
1 tablespoon organic coconut oil
1 tsp organic vanilla extract
Blend all ingredients together and cook in a little coconut oil flipping half way.
Creamy Caramel Sauce:
5 organic medjool dates (pitted)
80 – 100 mls organic almond milk (will vary based on the size of the dates and how thick you like your caramel!)
1 tsp organic cinnamon
half tsp organic vanilla extract
Put the pitted dates, cinnamon and vanilla in a blender. Cover with the almond milk and blend until smooth.
Top the pancakes with caramel sauce and a handful of organic pecans.
