Organic Maple Pecan Butter

This raw pecan nut butter uses just four ingredients and is really simple to make.

Ingredients:

1 cup organic pecans (ideally activated*).

1 tbsp organic maple syrup

1 tsp organic vanilla extract

1 tsp organic coconut oil (optional)

1 pinch sea salt

Add the pecans, maple syrup, vanilla and salt to a blender. Blend on high power using the ‘dry’ blade which is the attachment suitable for nuts and seeds.

The length of time this takes will depend on the strength of the blender that you use. For example I use a Vitamix which blends the nuts in about 3 minutes but a less powerful blender may take up to 15 minutes. Stop the blender every couple of minutes and use a spatula to bring all of the mixture back to the centre.

Optional shortcut – adding the coconut oil will help your nuts become creamy butter more quickly as the blending is breaking down the nuts to release their natural oils.

Once you have a nice creamy texture place your maple pecan butter in a jar and store in the fridge.

on pancakes

with celery and cucumber sticks

on toasted rye bread

inside a pitted date

*Why activate nuts? All grains, nuts and seeds have natural enzyme inhibitors which are removed or depleted by soaking and re drying a.k.a activating. This makes the enzymes and nutrients more readily available during digestion and in this case makes it easier to encourage the nuts to release their natural oils to turn into nut butter.

To activate pecans soak them in filtered water for 8 hours or overnight and dry in a dehydrator for 18 hours.
